Roatán's long white beach, with calm water and a reef close enough to snorkel from the sand. Resorts and beach bars rent loungers. The busiest place on the island on ship days.
How much time do you need?
Plan 4 hours for the whole trip, travel from and back to the ship included. Add a safety margin of about an hour and a half before your ship leaves: you want a port stop of at least 5.5 hours to do this without stress. Your ship's all-aboard time is what counts.
